Choco-chip pumpkin muffins!
2 t ea. baking powder, baking soda
1 t ea salt, cinnamon, nutmeg
2 c sugar
1 c oil
4 eggs
1 t vanilla
2 c canned pumpkin (pie, not spiced)
2 c chocolate chips
Preheat oven to 350 degrees.
1. Combine and sift dry ingredients. Realize that sifting takes far too fricking long and you ain’t got all night. Try to mix dry ingredients with hand mixer on low setting while eating chocolate chips out of the bag.
2. After the cloud settles, wipe dry ingredients off of counter with paper towel and sweep back into bowl. Be thankful your girlfriend wasn’t there to see that. Sift the hard way.
3. Add oil and mix thoroughly. Hope your hand mixer doesn’t catch fire because the dough is too doughy and you’re not allowed to touch your girlfriend’s super-expensive mixing machine.
4. Eat a ball of dough because everybody loves raw dough.
5. Spit out oily nasty dough because Jesus Christ it’s like 90% oil. Eat some chocolate chips.
6. Add eggs and mix thoroughly.
7. Add vanilla and pumpkin and mix thoroughly.
8. Set iPhone timer so you can mix the batter exactly 4 minutes so it’s nice and smooth. Hop out of the iPhone timer app and play some Sudoku and eat some chocolate chips while you wait. Realize ten minutes later that the stopwatch app and the alarm clock app are two different things and only one of them will beep at you and it’s not the one you were using.
9. Mix in remaining chocolate chips.
10. Pam muffin trays and fill each cup almost, but not quite, to the top. Sprinkle some coarse sugar on top. Sugar in the Raw will also work. 10x sugar does not work, not that we’ve ever tried it.
11. Bake in 350 oven for 15 to 20 minutes, until toothpick comes out dry. Or, at least, covered only with chocolate.
12. Burn your hands trying to get a muffin out before they’ve had a chance to cool.
